Ingredients
- 4 chicken breast fillets, butterflied and pounded thin
- ½ cup plain flour
- 2 eggs, beaten
- 1½ cups panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper
- Olive oil spray
- Lemon wedges and salad to serve
Method
- Set up a crumbing station: flour in one bowl, beaten egg in another, panko mixed with garlic powder, paprika, salt and pepper in a third.
- Coat each chicken fillet in flour, then egg, then press firmly into the panko mixture.
- Preheat air fryer to 200°C. Spray basket with olive oil.
- Cook schnitzels for 10ā12 minutes, flipping halfway, until golden and cooked through.
- Serve with lemon wedges, chips, and a simple green salad.
Tips
- Pound the chicken evenly so it cooks at the same rate throughout.
- Don't overcrowd the basket ā cook in batches if needed for maximum crunch.
