Slow Cooker Beef Brisket

Beef brisket is the ultimate low-and-slow showstopper — and your slow cooker does all the hard work. This is the dish to make Dad feel like he's eating at a proper smokehouse.

Ingredients

  • 1.5kg beef brisket
  • 1 tbsp olive oil
  • 1 brown onion, sliced
  • 4 garlic cloves, crushed
  • 1 cup beef stock
  • ½ cup tomato passata
  • 2 tbsp Worcestershire sauce
  • 2 tbsp brown sugar
  • 1 tbsp smoked paprika
  • 1 tsp cumin
  • Salt and pepper

Method

  1. Season brisket generously with salt, pepper, paprika, and cumin. Sear in olive oil over high heat until browned on all sides.
  2. Place onion and garlic in the base of the slow cooker. Sit brisket on top.
  3. Combine stock, passata, Worcestershire sauce, and brown sugar. Pour over brisket.
  4. Cook on LOW for 8–10 hours or HIGH for 5–6 hours, until fork-tender.
  5. Rest for 15 minutes, then slice against the grain or shred.

Serve with creamy mashed potato, roasted carrots, and a drizzle of the cooking juices.
