Slow Cooker French Onion Soup

There's nothing quite like a bowl of French onion soup on a cold winter's night — and your slow cooker makes it almost entirely hands-off.

Serves: 4 | Prep: 15 mins | Cook: 6–8 hrs (low)

Ingredients

  • 4 large brown onions, thinly sliced
  • 3 tbsp butter
  • 2 cloves garlic, minced
  • 1 tsp sugar
  • 1 tbsp plain flour
  • 1 cup dry white wine
  • 4 cups beef stock
  • 2 tsp Worcestershire sauce
  • Salt and pepper to taste
  • 4 slices sourdough bread, toasted
  • 1 cup gruyère cheese, grated

Method

  1. Melt butter in a large frypan over medium heat. Add onions and sugar, cook for 20 minutes stirring regularly until deeply caramelised.
  2. Add garlic and flour, stir for 1 minute. Pour in wine and stir to deglaze.
  3. Transfer to your slow cooker. Add beef stock and Worcestershire sauce. Season well.
  4. Cook on LOW for 6–8 hours.
  5. Ladle into oven-safe bowls, top with toasted sourdough and gruyère. Grill under a hot broiler for 2–3 minutes until cheese is golden and bubbling.

Tips

  • Don't rush the onion caramelisation — this is where all the flavour comes from.
  • Swap gruyère for Swiss or mozzarella if needed.
