There's nothing quite like a bowl of French onion soup on a cold winter's night — and your slow cooker makes it almost entirely hands-off.
Serves: 4 | Prep: 15 mins | Cook: 6–8 hrs (low)
Ingredients
- 4 large brown onions, thinly sliced
- 3 tbsp butter
- 2 cloves garlic, minced
- 1 tsp sugar
- 1 tbsp plain flour
- 1 cup dry white wine
- 4 cups beef stock
- 2 tsp Worcestershire sauce
- Salt and pepper to taste
- 4 slices sourdough bread, toasted
- 1 cup gruyère cheese, grated
Method
- Melt butter in a large frypan over medium heat. Add onions and sugar, cook for 20 minutes stirring regularly until deeply caramelised.
- Add garlic and flour, stir for 1 minute. Pour in wine and stir to deglaze.
- Transfer to your slow cooker. Add beef stock and Worcestershire sauce. Season well.
- Cook on LOW for 6–8 hours.
- Ladle into oven-safe bowls, top with toasted sourdough and gruyère. Grill under a hot broiler for 2–3 minutes until cheese is golden and bubbling.
Tips
- Don't rush the onion caramelisation — this is where all the flavour comes from.
- Swap gruyère for Swiss or mozzarella if needed.
