Whip up a quick and delicious meal with this Chicken and Veg Udon Noodle Stir-Fry! Packed with fresh veggies and tender chicken, it's a simple weeknight dinner that's full of flavour and ready in minutes.
What you'll need:
- 500g chicken thighs, thinly sliced
- 200g udon noodles (pre-cooked or fresh)
- 1 bunch broccolini, trimmed
- 1 carrot, julienned (thin strips)
- 1 red capsicum, thinly sliced
- 2 tablespoons sesame seeds
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil (for stir-frying)
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon honey (optional for sweetness)
- Spring onions (optional garnish)
Instructions:
- If using fresh udon noodles, set them aside. If using dried, cook according to package instructions, drain, and set aside.
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
- Add the thinly sliced chicken thighs and stir-fry until golden brown and cooked through (about 5-6 minutes). Remove from the pan and set aside.
- In the same pan, add the sesame oil, garlic, and ginger, stir-frying until fragrant (about 30 seconds).
- Add the broccolini, carrot, and capsicum. Stir-fry for 3-4 minutes, or until the vegetables are tender but still crisp.
- Add the cooked chicken back into the pan with the vegetables.
- Toss in the udon noodles and pour over the soy sauce, oyster sauce, and honey(if using). Stir well to coat everything evenly in the sauce.
- Sprinkle the sesame seeds over the stir fry and mix through.
- Garnish with chopped spring onions if desired. Serve hot and enjoy!
