Looking for a nutrient-rich dinner in 25 minutes? Look no further than this wholesome easy teriyaki beef and walnut stir fry.
Preparation time - 10 minutes
Cook time - 15 minutes
Serves - 4 people
What you will need:
- 2 tsp sesame oil
- 600g Beef Rump Steak or Scotch Fillet Steak, thinly sliced
- 1 red onion, cut into wedges
- 1 bunch baby broccoli, halved lengthways
- 1 bunch asparagus, woody ends trimmed, cut into 7cm lengths
- 2/3 cup (160ml) teriyaki sauce
- 1/2 cup (50g) walnuts, lightly toasted
- Steamed jasmine rice, to serve
How it's made:
Heat half the oil in a large non-stick frying pan over high heat. Add one-third of the beef. Stir-fry for 2 mins or until browned. Transfer to a bowl. Repeat, in 2 more batches, with remaining beef.
Heat the remaining oil in the pan. Add the onion, baby broccoli and asparagus. Stir-fry for 5 mins or until just tender. Return the beef to the pan with the teriyaki sauce and walnuts. Stir-fry for 1-2 mins or until the sauce boils and thickens slightly.
Divide the rice and stir-fry among serving bowls. Serve immediately.
