French Onion Stuffed Mushrooms

Looking for a mouthwatering appetiser or side dish? These French Onion Stuffed Mushrooms are packed with caramelised onion goodness and topped with melty cheese for a savoury treat that's sure to impress.

What you'll need:

  • 1 onion (large, thinly sliced)
  • 1 tsp sugar
  • 5 tbsp thickened cream
  • 1/2 cup mozzarella cheese
  • salt and black pepper (to taste)
  • 2 tsp thyme (8 fresh sprigs)
  • oil for brushing on mushrooms
  • 1/8 tsp nutmeg
  • 12 button mushrooms

How it's made:

  • In a large pan, add sliced onions with sugar and a pinch of salt.
  • Cook on low until the onions caramelise and turn amber brown, about 10-15 minutes.
  • Add cream and nutmeg, and mix well. Remove from heat.
  • Fold in thyme, set aside. 
  • Clean mushrooms then remove and discard stems. Brush with oil and sprinkle with salt and pepper.
  • Mix cheese with the onion mixture and stuff a generous table spoon in each mushroom.
  • Heat the air fryer to 180 degrees C and cook the mushrooms in a single layer (working in batches) for 8-10 minutes, or until mushrooms are cooked through and stuffing is golden and bubbling.
