This easy one-pot version of Jollof Rice delivers bold West African flavours with minimal effort, thanks to your rice cooker
What you'll need:
- 2 cups long grain rice, rinsed
- 1/4 cup vegetable oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon ginger, minced
- 1 tablespoon tomato paste
- 2 cups tomato purée
- 1 teaspoon thyme
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 1 stock cube (chicken or vegetable)
- 2 cups chicken or vegetable stock
- 1 bay leaf
- 1 red capsicum, chopped
- Salt and pepper, to taste
How it's made:
- Set your rice cooker to 'sauté' mode (or use a stovetop pan). Heat oil and fry onions until soft.
- Add garlic, ginger, and tomato paste. Cook for 2-3 minutes until fragrant.
- Stir in tomato purĂ©e, thyme, curry powder, paprika, and stock cube. Cook for another 5 minutes.Â
- Add rinsed rice, stock, bay leaf, and chopped red capsicum. Season with salt and pepper, and stir to combine.
- Close the rice cooker lid and cook on the 'white rice' setting.Â
- Once done, fluff the rice with a fork and remove the bay leaf. Serve hot.
