Jollof Rice

Jollof Rice

This easy one-pot version of Jollof Rice delivers bold West African flavours with minimal effort, thanks to your rice cooker

What you'll need:

  • 2 cups long grain rice, rinsed
  • 1/4 cup vegetable oil
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon tomato paste
  • 2 cups tomato purĂ©e
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1 stock cube (chicken or vegetable)
  • 2 cups chicken or vegetable stock
  • 1 bay leaf
  • 1 red capsicum, chopped
  • Salt and pepper, to taste

How it's made:

  • Set your rice cooker to 'sautĂ©' mode (or use a stovetop pan). Heat oil and fry onions until soft.
  • Add garlic, ginger, and tomato paste. Cook for 2-3 minutes until fragrant.
  • Stir in tomato purĂ©e, thyme, curry powder, paprika, and stock cube. Cook for another 5 minutes. 
  • Add rinsed rice, stock, bay leaf, and chopped red capsicum. Season with salt and pepper, and stir to combine.
  • Close the rice cooker lid and cook on the 'white rice' setting. 
  • Once done, fluff the rice with a fork and remove the bay leaf. Serve hot.
