This mini frittata is packed with veggies, cheese, and eggs - all baked to perfection in a 13cm cast iron skillet. Perfect for a personal-sized brunch or snack.
What you'll need:
- 2 large eggs
- 2 tablespoons milk
- 1/4 cup grated cheese (cheddar, feta, or your choice)
- 1/4 cup chopped veggies (broccoli, capsicum, mushrooms)
- Salt and pepper, to taste
- 1 tablespoon olive oil
How it's made:
- Preheat your oven to 180 degrees C.
- Whisk eggs, milk, cheese, salt, and pepper in a bowl.
- Heat the olive oil in the 13cm cast iron skillet over medium heat.
- Add the veggies and sauté for 2-3 minutes until softened.
- Pour the egg mixture into the skillet and cook for 1-2 minutes until the edges start to set.
- Transfer the skillet to the oven and bake for 8-10 minutes, or until the frittata is fully set and golden on top.
- Let it cool slightly before serving.
