Slow Cooker Beef Barbacoa Tacos

Searching for the ultimate taco filling? This slow cooker beef barbacoa recipe will heat up your taco night.

What you'll need:

  • 1kg brisket, chopped into chunks
  • 4 tbsp chipotle sauce
  • 2 medium red onions, peeled and sliced
  • 3 cloves garlic, peeled and minced
  • 2 medium limes, juice and zest
  • 1/3 cup apple cider vinegar
  • 2 cups beef stock (made with 1 stock cube)
  • 1 bunch coriander, fresh, chopped (stalks included)

How you'll make it:

  • Place the brisket, chipotle sauce, red onions, garlic, lime juice and zest, vinegar and beef stock in the slow cooker. Stir in half the coriander and stalks.
  • Cook on high for 2 hours, then stir and reduce the heat to low for 4 hours, until the meat pulls apart easily. 
  • Serve on warmed soft taco shells and top with onion, coriander, and a squeeze of lime.
