Searching for the ultimate taco filling? This slow cooker beef barbacoa recipe will heat up your taco night.
What you'll need:
- 1kg brisket, chopped into chunks
- 4 tbsp chipotle sauce
- 2 medium red onions, peeled and sliced
- 3 cloves garlic, peeled and minced
- 2 medium limes, juice and zest
- 1/3 cup apple cider vinegar
- 2 cups beef stock (made with 1 stock cube)
- 1 bunch coriander, fresh, chopped (stalks included)
How you'll make it:
- Place the brisket, chipotle sauce, red onions, garlic, lime juice and zest, vinegar and beef stock in the slow cooker. Stir in half the coriander and stalks.
- Cook on high for 2 hours, then stir and reduce the heat to low for 4 hours, until the meat pulls apart easily.
- Serve on warmed soft taco shells and top with onion, coriander, and a squeeze of lime.
